The Senior Chef de Partie is responsible for managing a designated kitchen section to the highest standards, supporting junior chefs, and ensuring consistently high-quality food production. Key Responsibilities Take full responsibility for a specific section (e.g. sauces, mains, pastry, grill). Prepare, cook, and present dishes to agreed standards of quality, consistency, and presentation. Assist with daily specials, and seasonal changes. Ensure portion control and minimal food waste. Supervise and mentor Chef de Parties, Commis Chefs, and Kitchen Assistants within your section. Support the Sous Chef in training, motivating, and developing kitchen staff. Act as a role model for professionalism, teamwork, and best practice. Step in to cover Sous Chef duties when required. Ensure full compliance with HACCP, food safety, and hygiene regulations. Maintain cleanliness and organisation of your section at all times. Correctly label, store, and rotate food products (FIFO). Assist with stock ordering and inventory for your section. Monitor food costs and report wastage or quality issues. Work efficiently to meet GP and cost-control targets. Ensure smooth service during busy periods. Communicate effectively with the wider kitchen and front-of-house teams. Follow all company policies, procedures, and standards. Skills & Experience Required Proven experience as a Chef de Partie or Senior Chef de Partie in a professional kitchen. Strong technical cooking skills and section management experience. Good understanding of food safety and HACCP systems. Ability to work well under pressure in a fast-paced environment. Strong organisational and time-management skills. Team player with leadership potential. Experience in high-volume or high-standard dining (hotel, restaurant, gastro-pub, etc.). Experience assisting with menu development.
