Role Overview: We are currently seeking a Junior Sous Chef or Sous Chef to join our talented kitchen brigade. This is a fantastic opportunity for an ambitious chef who is ready to step up, support the Head Chef, and play a key role in maintaining and improving the high culinary standards that Searsons is known for. Key Responsibilities: Kitchen Leadership: Support the Head Chef in day-to-day kitchen operations, helping to lead the team and ensure smooth service. Food Preparation & Cooking: Oversee prep and service across multiple sections of the kitchen, ensuring every dish is delivered to spec, on time, and to the highest standard. Training & Mentorship: Assist in training and supervising junior chefs, maintaining morale, efficiency, and consistency. Menu Development: Contribute ideas for seasonal and special menus, bringing creativity and balance to the offering. Hygiene & Compliance: Ensure the kitchen meets all HACCP and food safety requirements, maintaining a clean, organised environment. Stock & Cost Control: Help manage ordering, stock rotation, waste reduction, and portion control to maintain margin and quality. Qualifications: Minimum 3 years kitchen experience, including at least 1 year in a supervisory or senior chef role. Culinary qualification or equivalent hands-on experience in a busy gastropub or restaurant. Proven ability to manage sections independently and supervise a team during busy service periods. Strong understanding of Irish and European cuisine. Excellent communication, leadership, and organisational skills. Calm and professional under pressure.
