  • Head Chef

    - Galway

Have you got what it takes to make Hyde the place everyone talks about when they talk about Galway.... We’re a Galway‑based hospitality group with a 69‑bedroom property that just happens to house one of the city’s most exciting food and drink spaces: a buzzing bar, a design‑led restaurant and a laid‑back café – each with its own door, its own energy and its own loyal following. Locals don’t think of us as “the hotel restaurant”. They think of us as the spot to meet, eat, drink and stay late. Now we’re looking for a new‑generation Head Chef to take that reputation to the next level. Think: vibrant, music‑filled room; bold, shareable plates; knockout mains; confident desserts; cocktails to match; a room that feels like a city hotspot. Venues like Amazonico inspire us in terms of energy, theatre and generosity – but this will be distinctly Galway, and distinctly you. The Opportunity This isn’t a back‑of‑house, keep‑the-lights‑on role. It’s a chance to: Create a signature food identity for the venue – something people recognise, crave and talk about. Build menus that feel current and exciting : seasonal, colourful, global in influence, rooted in quality Irish produce. Shape a true destination – a place locals claim as “their” spot and visitors hunt down when they’re in Galway. Put your name to a project where food, drink, music and design all pull in the same direction. What You’ll Be Doing As Head Chef you will: Lead the culinary vision for the bar, restaurant and café, with distinct offers that still feel part of one strong brand. Design and evolve menus across brunch, lunch, dinner, bar food and events that are: Ingredient‑led and seasonal Big on flavour and texture Visually striking and social‑media ready Bring the best of global food culture to Galway , translating trends into dishes that actually work for our guests and our market. Set the tone in the kitchen – energetic, professional, collaborative – and develop a team that’s proud of what hits the pass. Work hand‑in‑hand with the bar and FOH teams so plates, cocktails, service style and soundtrack tell one cohesive story. Champion local and Irish suppliers , discovering producers and products that give our menus a real sense of place. Own the numbers – GP, labour, purchasing, waste – and use them intelligently so creativity and commercial sense go together. Guard our reputation with uncompromising standards on quality, consistency, hygiene and HACCP . Show up as the face of the kitchen when needed – tastings, collabs, social content, chef’s tables – building a buzz around what we do. Who You Are You’ll thrive here if you are: A vibrant, ambitious chef with a modern palate and a point of view. You care about flavour first – but you also understand theatre. Plugged into what’s happening now : you follow restaurants, chefs and food scenes at home and abroad and love adapting ideas in your own way. Confident working in a high‑energy, high‑volume environment , where the room is full, the music’s up, and the bar is flying. A natural leader who sets standards by example – calm in the push, clear at the pass, generous with your knowledge. Commercially switched on: you know how to cost a dish, engineer a menu and run a tight prep so the kitchen performs at its best. A strong collaborator who enjoys bouncing ideas with bar, management and marketing to keep the offer evolving. Excited by the idea of putting your stamp on Galway’s food map – and building a venue people talk about in the same breath as their favourite city spots. Experience & Requirements Proven experience as Head Chef, or a strong Senior Sous ready for their first Head Chef role, in a quality, trend‑led restaurant/bar environment . Clear track record of creative menu development that balances innovation, seasonality and profitability. Experience leading and developing a team in a busy kitchen. Strong understanding of current food trends, global flavours and contemporary plating . Solid grip on GP, stock, costings and rota planning . Up‑to‑date knowledge of food safety, HACCP and all relevant legislation . What You’ll Get A rare chance to own the food direction of one of Galway’s most talked‑about venues , not just execute someone else’s vision. Excellent salary package and performance‑linked benefits. Real creative freedom within a supportive ownership and management team who want you to push boundaries. The support of a strong bar and FOH operation equally committed to delivering a standout guest experience. Genuine career progression within a growing hospitality group – this is a role to build a name and a future from. #J-18808-Ljbffr

  • Food & Beverage Manager

    - Galway

Lead the team behind one of Galway’s most talked‑about venues. We’re a Galway‑based hospitality group with a 69‑bedroom property that’s home to a high‑energy bar, design‑led restaurant and laid‑back café – each with its own entrance, its own vibe and its own loyal crowd. Locals don’t think of us as “the hotel bar”. We’re a standalone destination : the place you meet friends, start your night, celebrate, or linger over brunch. We’re now looking for an exceptional Food & Beverage Manager to take the reins of service, people and product – and help make this the go‑to spot in Galway. Think: busy, buzzy room; confident, trend‑aware cocktails; a creative, chef‑driven menu; great music; guests who arrive for one drink and end up staying all night. Your job is to make sure it all feels effortless. The Opportunity This role is for someone who wants to be front and centre of the action . You will: Shape what great service looks and feels like in a venue that aims high. Build and lead a vibrant, guest‑obsessed team across bar, restaurant and café. Partner with a creative Head Chef and ambitious owners to keep evolving our offer. Put your name to a place people recommend when they say, “You have to go here when you’re in Galway.” If you love energy, atmosphere and standards in equal measure, this is your stage. What You’ll Be Doing As Food & Beverage Manager, you will: Own the guest experience across bar, restaurant and café – from coffee to cocktails, brunch to late night. Lead, inspire and develop the F&B team : recruiting the right personalities, training for skill and attitude, and creating a culture of pride and accountability. Drive impeccable yet relaxed service standards – warm, genuine, efficient, never stiff or scripted. Partner closely with the Head Chef to align food and drink, coordinate service, and deliver a seamless experience at every touchpoint. Work with our bar team to develop and refine a cutting‑edge drinks programme – cocktails, wines, beers, non‑alcoholic – that matches the ambition of the food. Shape the atmosphere : pace of service, lighting, music, table flow – the details that make a room feel alive. Maximise revenue through smart upselling, menu engineering, reservations management and events, while always protecting the guest experience. Take ownership of standards and compliance : cleanliness, health & safety, licensing, stock controls and cash procedures. Analyse performance – covers, average spend, guest feedback, online reviews – and use the numbers to drive continuous improvement . Collaborate with marketing and management on promotions, events, collaborations and social media moments that build our profile as a must‑visit venue. Who You Are You’ll fit this role if you are: A natural host – you light up the room, remember names, read the floor and make people feel instantly at ease. Passionate about modern food and drink culture : you follow bars, restaurants and trends and love bringing fresh ideas to the table. Experienced in running busy, style‑driven bar/restaurant operations , ideally in a city or destination setting. A hands‑on leader who is visible on the floor, coaching in real time, supporting the team and setting the pace. Calm under pressure, with a solutions‑focused mindset – when the room is full and the bar is three deep, you’re at your best. Commercially sharp: you understand GP, labour, rotas, stock and margins , and know how to hit targets without sacrificing quality. An excellent communicator and collaborator , comfortable working across departments and with ownership to push the venue forward. Excited by the chance to help define a flagship Galway venue , not just maintain the status quo. Experience & Requirements Proven experience as F&B Manager, Restaurant/Bar Manager or Assistant F&B Manager in a busy, quality‑focused bar/restaurant environment . Demonstrable track record in team leadership, training and people development . Strong background in guest‑centric service , with a clear eye for detail and standards. Solid understanding of bar operations , cocktail culture and wine service. Confident with budgeting, P&L basics, stock control, rota planning and reporting . Knowledge of licensing, health & safety and food hygiene regulations . Hotel experience is welcome but not essential – what matters most is your ability to run a destination venue with personality and precision. What You’ll Get A chance to lead the full F&B experience in one of Galway’s most exciting venues, not just a single outlet. Competitive salary and performance‑linked incentives. Real influence on concept, product and service style , working alongside passionate owners and a talented Head Chef. A strong, supportive team culture and the resources to do things properly. Genuine career progression within a growing hospitality group – this is a role to grow your reputation and your future from. #J-18808-Ljbffr
