    About Us Gleesons Roscommon is a family-run townhouse and restaurant located in the heart of Roscommon Town. We pride ourselves on warm hospitality, locally sourced produce, and freshly prepared dishes that celebrate the best of Irish ingredients. Our restaurant has been a cornerstone of the community for over 30 years, and were looking for a dedicated Sous Chef to join our passionate kitchen team. Role Overview As Sous Chef, you will play a key leadership role in the kitchen, supporting the Head Chef in all aspects of food preparation, kitchen management, and team supervision. Youll help maintain our high culinary standards, ensure smooth daily operations, and contribute to menu development using fresh, seasonal, and local ingredients. Key Responsibilities Assist the Head Chef with daily kitchen operations and food preparation. Supervise and motivate kitchen staff, ensuring consistent quality and presentation. Support in menu planning, cost control, and stock management. Ensure all food is prepared and served to the highest standard in line with HACCP and food safety regulations. Maintain a clean, organised, and efficient kitchen environment. Step in to manage the kitchen in the absence of the Head Chef. Contribute creative ideas for specials, seasonal dishes, and menu updates. Help train and develop junior chefs and kitchen porters. Requirements Proven experience as a Sous Chef or strong experience as a Senior Chef de Partie in a busy kitchen. A passion for fresh, local, and high-quality food. Excellent leadership, communication, and organisational skills. Strong understanding of food safety and hygiene standards (HACCP certified preferred). Ability to perform well under pressure in a fast-paced environment. Flexibility to work evenings, weekends, and holidays as required. What We Offer Competitive salary, based on experience.
