    Dromoland Castle Hotel, is seeking an experienced Assistant Night Manager to support the smooth and efficient overnight operation of the hotel. The successful candidate will ensure that all guest interactions, operational procedures, and service delivery consistently reflect Forbes Travel Guide standards, with a strong focus on personalised service, security, cleanliness, and attention to detail. Key Responsibilities: Oversee the Night Operations function, ensuring service delivery consistently meets Forbes Travel Guide luxury standards. Carry out front office duties, ensuring accurate awareness of nightly business activity and completion of operational and management reports. Deliver warm, intuitive, and personalised guest service, responding to queries efficiently and professionally. Build exceptional rapport with guests, anticipating needs and exceeding expectations in line with Forbes service philosophy. Conduct and accurately log all nightly security, fire, and safety checks. Support Food & Beverage departments during overnight operations when required. Ensure all cleaning standards, checklists, and presentation standards are fully maintained. Handle guest reservation enquiries with accuracy, discretion, and professionalism. Ensure meeting and function rooms are set up precisely to hotel and Forbes standards. Assist with team training and provide on-the-job coaching to ensure consistent service excellence. The Ideal Candidate Will Have: A minimum of 12 years experience as an Assistant Night Manager or Night Supervisor within a 4 or 5-star or Forbes-recognised property. Strong knowledge of front office systems and luxury hotel operations. Excellent organisational, communication, and interpersonal skills. A natural passion for luxury hospitality and delivering personalised guest experiences. The ability to lead by example and work collaboratively within a team environment. A full, clean driving licence. Flexibility and enthusiasm for working night shifts. Overview of the Role: To assist the senior culinary team ensuring the successful operation of the kitchen. To assist the kitchen team in the preparation of food according to recipes and cooking standards. To train and guide Chef de Parties, Commis Chefs & Kitchen Assistants. To assist in the set up and organisation of the assigned workstation. To be fully aware of HACCP and follow the procedures detailed within. To ensure regular training takes place with the kitchen team. To ensure that hygiene is maintained and promoted in food preparation in accordance with Company Policy and Statutory requirements.
